The inspiration to bake these cookies came to me on a dull, grey, rainy day. They don't take long, or use many utensils, and you can switch up the ingredients, depending on what you have in the house, meaning you won't have to venture outside on a rainy day!
Start by gathering your ingredients:
1 cup of butter or marge
1 cup of sugar
1 cup of brown sugar
2 eggs
1 tsp vanilla extract
2 cups plain flour
1 tsp bicarbonate of soda
1/2 tsp baking powder
2 cups of oats (something like Quaker porridge oats, not Ready Brek)
1-1 1/2 cups of filling (I used 3/4 cup raisins and 1/4 cup glacé cherries)
Next, put them together:
In a large bowl, cream the butter and sugars, then beat in the eggs and vanilla.
Sift in the flour, baking powder and bicarb.
Stir in the oats and filling.
Drop round teaspoonfuls of mixture 2" apart on a greased baking tray and bake for 10-15 minutes or until golden brown.
Make sure you don't make the mistake that I did first time and add too much mixture to the tray! Even seasoned bakers make mistakes!

These cookies turn out beautifully sticky, a gooey, and are just as good with chocolate chips as they are with raisins, a perfect elevenses treat! I found them really quick and easy to make, perfect for when you're short of time, like me!
1 month today and my exams will be over, I'm looking forward for some time that I can dedicate to baking and relaxing, instead of work!
